Tabbouleh is an Arab salad traditionally made from cracked wheat. This recipe however is made from cauliflower and it is FANTASTIC! Thank you Bridget! This version has all the other yummy ingredients you would expect and you can vary the portions to your liking. Enjoy with vegetable, brown rice crackers, or just by itself as a side dish. Thanks to Bridget for this awesome dish!!!!!

ingredients

  • 1 head cauliflower - food processor chopped o bulgur-type pieces
  • 1 bunch parsley - chopped. I like flat leaf, but use your favorite
  • 1 bunch of mint - chopped. This is essential for that unique, fresh taste
  • 1 box grape tomatoes - cut in half
  • 1 bunch scallions - chopped
  • 4 cucumbers - peeled, seeded (I like it this way) and chopped
  • 1 shallot - finely diced
  • 1 lemon - juiced
  • Zest of that lemon
  • 1/4 cup oil - avocado oil, olive oil, etc.
  • Salt and pepper

​Mix and Enjoy!!!!
